Cinnamon roll bread

Last night I made some bread. While I rolled out the pizza dough, rolled the edges and added toppings; my 3 year old son was working with the dough left over. He flattened it and wanted to roll it up. (I like to do this with the bread I shape).

I already 2 loaves of bread ready to cook, so we made a sweet bread. I didn’t want my son to feel like I didn’t want his help, so we left it in the shape he made, and all of the random thicknesses. It all tastes the same.

I have so much fun in the kitchen. I think the boys are learning if they want food faster, mommy needs more help in the kitchen.

Cinnamon Bread Roll

Recipe:
Any basic bread
Mixture of cinnamon & sugar
Dried fruit or nuts of your choice

I do not have a bread recipe. I add liquid, flour, and leavening. Sometimes salt, molasses, honey or fat. This basic bread recipe can give you an idea if you don’t already have one.

I make a homemade cinnamon and sugar mix. Again no specific amounts. I like to include cinnamon, nutmeg, cloves, allspice, and ginger into my mix. Honestly my husband made the last batch, so I don’t have a clue of all the measurements. This mix was more spice than sweet, so I spread honey instead of fat on the bread after it was rolled out. Next we sprinkled the cinnamon mix and currants in the bread. Then we rolled it up, sealed the edges, and oiled the top.

I baked it at 350* for about 45 min. I like to temp the bread at 170*, and have the thermometer come out clean. I remove the bread when done, and let it sit for another 10-15 min. Then remove it from the pan and let it cool to room temp before I slice it.
